Join us for an in-depth tour of Islay Rum, where we will explore everything from molasses selection and sourcing to fermentation, examining how different yeast strains shape flavour and form the backbone of our spirit. We will also take a microscopic look at yeast to see these remarkable organisms up close.
From there, we will move on to distillation, taking a closer look at our unique pot and twin retort still. We will discuss spirit cuts and the importance of heat and timing, while a series of hands-on sensory activities using sight, smell and touch will help illustrate how different elements of distillation influence the character of the spirit. We will also demonstrate how changing alcohol strength can reveal the natural oils and texture hidden within our rum.
We will finish with a short walk to nearby Kilnaughton Bay Beach, where you will taste our range of rums alongside a specially curated cocktail designed to complement each expression.
Our beachside tasting is, of course, subject to Islay's wonderful weather and will instead take place in the distillery if conditions are not favourable.
