We are a pantry and we keep things simple. We use the best seasonal, locally source food as we possibly can. We work very closely with our suppliers and in turn they work very hard to supply us the best produce they can.
We have a natural approach and will not use overly processed foods, we only use sourdough bread and our eggs come farm direct. We are sometimes rewarded by locals with produce from their allotments and the freshness, care and dedication to growing really show.
Ashley has been influenced by urban food and has a passion for seasonality and as a result we keep things natural. Foraging and use of traditional fermenting, pickling, salting and jamming play strongly in our approach. We like to take the waste not ethos into account using root to shoot and lesser know cuts. These applications add new dimensions and flavours to our dishes and keep the creative process interesting.
