Brian Maule at Le Chardon d’Or can convincingly claim to offer one of the best fine dining experiences in Scotland. Brian is one of the most distinguished fine dining chefs, having been mentored by Michel Roux Junior and Albert Roux at London’s world famous two-Michelin-starred restaurant Le Gavroche. He brought his unique brand of Scottish-accented French cooking to Glasgow’s customer with the opening of Le Chardon d’Or in 2001. Brian’s name isn’t just above the door. He works in the restaurant every day and his passion for detail means that no dish leaves the kitchen without him being completely satisfied. He employs only the most experienced, enthusiastic and committed staff, developing and nurturing their skills and then watching them go on to work in Michelin-starred restaurants around the world or even open their own businesses. Brian is a staunch supporter of getting young people into the catering industry and is actively involved in the Culinary Excellence Scheme, helping youngsters from disadvantaged backgrounds to experience life in a professional kitchen.
